I know I said this blog would be about food and nutrition. While I love to cook, don't expect a ton of recipes out of me. There's a ton of good cooks out there with published books full of yummy recipes. I'm not about to rip them off. What I will do is share my own favorite activity in cooking. I like to "veganize" recipes that I find. More specifically, recipes in magazines. Most specifically, recipes in "Real Simple" magazine.
This month's issue has a ton of recipes that I plan to play with. First and foremost: Vegetarian Tacos with Spinach, Corn and Goat Cheese. Looks awesome right? Yes, I understand that it started out vegetarian, but I still had to alter it. Oh, how I love to alter. I decided to substitute the chili powder and salt and pepper for Trader Joe's taco seasoning mix. I have chili powder in the house, the alternative just sounded... experimental.
The result looked divine (see below), smelled divine (wish you were here to smell it) and was so darn hot my lips were burning like the fires of hell. I wanted anything to quench the burn, I wanted water.. milk... a beer.
Now the fine editors at "Real Simple" will tell us that these tacos provide 355 calories per taco with 18 g from protein, 46 g carbohydrates and 14 g fat. Don't worry about the carbs, this is fairly standard for veggie food. This is the only thing I worry about: I was barely able to finish one and it was so darn spicy that I still want a beer. Healthy food should not make one crave booze. Alas, I have no one to blame but myself.
Seriously, try the recipe. It was tasty, and likely less incendiary to the tongue if followed properly.
and the goat cheese became... tofu?

No, it's cheese. The tofu is the taco filling. It's not always vegan. There's organic goat cheese on that taco.

Yes, TJ's taco seasoning has quite a kick to it. I'm not a fan really. Plus, it is extremely salty tasting to me. Maybe that was what caused you to crave the cerveza. By the way... Did you drink it? + 10 points if you did.
